Guitar Hero support center reveals realease date April 10, 2007
The knowledge base at RedOctane, (GuitarHero’s publisher) reveals the release date for the Wii version of Guitar Hero III:
Q: When is Guitar Hero 2 (II) Coming? Will there be GH 2 for Wii, PS3, XBox, Xbox 360, etc?
A: Guitar Hero 3 for the Playstation 2, PS3, Xbox 360 and Wii are currently scheduled for release in the United States in Fall of 2007.

I dont know if I should buy the third one for PS2 and get a scond guitar for 2 player or buy the Wii version and have one of each guitar because Wii will probably have some sort of online capability. But then I’d buy a second one for the Wii eventually.
